2 new recipes equal one awesome dinner

Tonight Mom and I tried two new recipes and let me tell you they were delicious! 

We made Thai beef and Kiwi and Shrimp Slaw both from recipes we discovered in magazines.  You never know where you'll find a good one right?

Thai Beef Pitas
**excuse the notes, we always write comments and additions as we are taking our first bites**
Our suggestions for this would be to use 2 tsp. of ground ginger in place of fresh if you don't have that on hand also we want to try it with chuck roast, chicken, and shrimp.

If you are going low carb switch the pita (we used 100 calorie whole wheat variety) for a lettuce wrap.

Kiwi Shrimp Slaw


We marinated the slaw for about 20 minutes before adding the shrimp. 

And the finished product! 

We found the recipes in two very different magazines (Family Circle and SELF), but when put together they made great complementing components.

I would highly suggest both of these recipes and they are Mom and Dad approved, so hopefully they'll go over just as well at your house!

For the love of overnight oatmeal

Last week Dad challenged me to lose another 15-20 pounds this summer so I said he had to do it with me. And now here we are! 

I wanted to share a recipe that Dad is absolutely obsessed with and that is overnight oatmeal. I tried it last week when I was working the morning shift so I could have something prepped for me to eat when I got there and now dad asks me to make it for him every night. He takes it for breakfast and lunch when he has been going fishing and if that's not a score for healthy eating I don't know what is. 

It is so easy and totally customizable! 

Here's the base:
1/2 c oatmeal raw oatmeal 
2T chia seeds (optional) 
2/3c almond milk

My favorite additions are:
1T cocoa powder
1t Nutella
1t vanilla

Dad's additions are: 
1/2 a mashed banana 
2T plain Greek yogurt 
A small sprinkle of dried berries

Crossfit

I am so pumped to tell you all that I started cross fit at a new gym in Stillwater and I am loving it! There is nothing better than lifting and when everyone around you has the same goals it makes it that much more motivating to give it all I've got. 

Today after cross fit I met up with Bailey and did some stairs....I'm sure I'll pay for this decision tomorrow on our way to the November Project, but everyday is one day closer to making my goals a reality.

The piece that doesn't fit

These past couple weeks have been hard. I thought I would love being back at home with my friends and family, but it hasn't been easy. I am not finding my groove and I really just want to be back at school. With a gym, free time, and friends. 

The third night I was home from school my dad had a traumatic fishing experience and ended up rescuing someone from the river. This was not the way anyone wants to start their summer living in a river town. 

I thought I was going to be able to move on quickly, but this single event has changed the entire family dynamic. Dad isn't the same and I'm worried he won't be back to my "dad" again. He's lost his spark and energy and it is proving to be difficult for me. 

My workouts have been good. I've gotten a lot of miles in and have tried a ton of new workouts which is awesome, but I feel like I don't fit. 

I feel disconnected from people and the commonalities we used to share still exist but not to the extent they used to.

I am looking forward to my actual job starting in a few weeks so I can get into a better routine. It's also my first week at a new crossfit gym next week, so here's to new beginnings.

Whirlwind Week

It has been a great first week back at home.  I honestly am so grateful that I chose to take this week "off" of work.  I needed some free time, although, I am not sure that I have really had any of that this week.

Here are just a few things that happened this week:
-Twin Cities Mom Expo with Bailey, Katie, and Bria

-Sunday dinner with Bailey and Katie
The classic meal of tacos and frozen yogurt! 


-Katie and I tried but HOT Yoga and Yoga Sculpt.

The only thing I can say about both is that I didn't know a single body could produce that much sweat in a single hour.

- Stairs..on stairs...on stairs...


Once with Bailey, once with Katie, and tomorrow is with Katie again :) #calvesfordays

- Monday I went back to campus for a study session and am so glad I got to have lunch with Annie and Nina.  I miss them so much already....

-Wednesday, Katie and I did a Mill City Running training 5k race at Fulton Brewery.  We had a blast and the beers at the finish line weren't too bad either.  Even if Katie had to take one for the team and finish mine lol.


-Oh, and I got another job as an Educational Aide at St. Croix Prep.  My first day is tomorrow...


Do I have an off switch?

More to come this weekend!  I have lots more adventures planned :)

Summer 2015

There are just two small things separating me from completely embracing summer and I cannot believe it.  I have a take home exam on Thursday and a paper due Friday, but that's it junior year has come to a close.  It honestly feels like yesterday that my parents were moving me to school for the first time....now in a mere three months it will be the last. 

I moved home this morning and it has been a glorious day that even included a well deserved nap. 



This summer I want to continue on a healthy path and really focus on becoming a better and more balanced me. 

Some of my summer goals as of now are: 

  • Run at least three miles a day
  • Lift 4 days a week
  • Do the Stillwater Stairs adding one set each week
  • Go out at most once a week and keep drinks limited at 2
  • Clean eating
  • One cheat meal per week 
  • No sweets
  • Try a new workout class, restaurant, cafe, or store each week. 
  • Meet new people
  • Get out of my comfort zone whenever possible
